Any idea if these 15x8 +20 will fit on my 2door 510 with 280zx front struts? I would be willing to roll the fenders. What tire size?

They could be made to fit.
You will quite likely have strut tube interference up front. Nothing that can't be remedied with spacers though. You will require camber to tuck the rims up front and in the back and it will require a tight roll. You will not be able to fit a whole lot of rubber on there. I would not urge you to get a tire larger than 195/50/15. A 205/45 would likely be possible as well but I would make the bare rims fit first and decide how much clearance you want/need and choose tires accordingly.

For the rim, the ZXT used a 15x7" at +12. With the .5" wider rim per side with the 15x8" rim, the offset would need to change -12.7mm to give similar clearance to stock, no?

Zx snowflakes are 15x6 +12. I don't think any came in 7s. I didn't run this setup through my fitment excel sheet but I will once I get back on the comp....

It looks like you'll need somewhere around a 1"+ spacer up front and no spacer out back. Stock camber should clear the rims but it depends a bit on tire size. I think that rim will clear the rear control arm. It is tougher to figure out due to its weird shape. You could always notch the control arm and/or space out the wheel depending on how it fits.
The inside rim lip on the 8's sits 33.4mm more inboard relative to the hub on the stock 280zx snowflakes (15x6+10).
To figure it out: ((8"-6")*25.4) / 2 {half the increase in rim width} + (20-12)mm {increase in offset) = 33.4mm. I don't know off hand how tight the stock ZX snowflake fits to the strut so the spacer could certainly be less than 33mm. By how much, I do not know.
If you do decide to go this route I would highly recommend hub centric spacers...
