I received the nut / bolt kit last Monday.
Nice quality stuff and probably more than I will need to reassemble the car.
I checked with our fastener supplier and he said that these bolts (stamped 10.9) are equivalent to grade 8 fasteners. It's nice to know that I can use them everywhere.
The o.d. Of the washers for the M6 bolts is a bit smaller than the o.d. Of the flanged head of the M6 bolts. But our supplier hooked me up with some larger yellow zinc plated washers so all is good

I noticed the washer o.d. thing too. I was wondering if you really need the washers, since of the flanged head?

If the backside of the head was serrated I might leave them off as well as a lock washer. But if I'm using lock washers where the bolts thread into captured nuts which is the case for most of the body panels. I prefer to use a flat washer between the lock washer and the body or bracket. I don't know. Is this overkill?

I know this was a while ago now. But I'm in the market for a lot of new nuts, bolts and washers and thought a kit must exist. The eBay seller linked isn't selling, but there are loads still, anyone have any recent experiences or is there a 510 specific kit that's not been made (and I can't find)

As crazy as it sounds... I actually did this when I restored my car. The zinc plater wanted all the fasteners for the car in one coffee can. We did this 20 years ago and my memory was a bit more optimistic than my approach. Unfortunately I don't have a list per se, and sadly what I do have might probably won't help you much.
Here's the backstory: When we restored the car we disassembled everything that could possibly be taken apart. At the time (pre-internet, pre-digital photography) we took film photos of the more complex parts to try and remember how they went together. We put the fasteners for every assembly in individual ziplock bags. Eventually the entire car was a pile of labeled ziplock bags filled with parts.
When we went to the zinc plating company the guy tells us that he wants all the parts "in one single coffee can" and that he wouldn't be doing the job by assembly. As I remember we had over a 1,000 fasteners so this freaked us out a bit. How the hell would we remember what belongs to what?
We figure the only way to keep track of everything was to create an inventory card for each assembly. We didn't need to necessarily write down thread pitch but we need something where we could quickly identify the silhouette of a fastener. SO that's what we did.

(N= Nut, W= Lock Washer, LW= Lock Washer, etc)
